Not Exactly Half-Baked

You know how I loves my pasta, right?

Well, this is a new recipe that I tried the other night for baked ziti with ricotta and parmesan.


It's from The Best Casserole Cookbook Ever--not even kidding--by Beatrice Ojakangas. That name is a mouthful, but so are the dishes.


This one could not have been easier, and it was delish, I have to say.



It called for spinach, but I left that nasty stuff out and put an extra handful of parmesan (and love). I'm guessing you could improvise and add chicken, sausage, breadcrumbs, and/or any number of vegetables, if you're into that sort of thing.


What have you been cooking lately? I know it's cold out, but at least the residual heat from the oven will make the house warmer. Bonus!

  1. I cooked a bowl of oatmeal in the microwave... then ate it whilst driving my morning commute. It makes the oatmeal seem so much more exciting, don't you think?

  3. Extra parm sounds a treat - but I don't think you're giving spinach a fair shake! The most delicious (and homemade top to bottom - yes, even the pasta) lasagna I ever made was built upon a bedrock of spinach.

  5. This looks delicious!!! That extra handful of parmesan (and love) was probably perfect. I've been making a lot of warm and cozy soups and grilled cheeses. Hits the spot!! Listen to Jason, spinach isn't thhaaaat bad, Tommy :)

  8. I've added that cookbook to my ever growing amazon cart. I would use the spinach and prolly some meat of some sort and I haven't met a bread crumb I didn't like. A nice addition I think. ;o)

    Today I made country ham & honey biscuits for brunch and grilled ribeyes (in honor of the heatwave) with king crab legs, roasted broccoli & carrots and garlic toast for dinner. First time I've cooked like that in a while.

    Tomorrow night will probably be homemade pizza and I have to cook for 2 different family bday parties on Sunday. That means Chinese Friday night before going to shop for ingredients for said parties. whew!
